Passion, respect, love. These are the three forces that move us in our daily lives with our vines. 

Passion for our work, respect for the soil and love for the family tradition in cultivating the vineyards from which wines, that are pure expression of the territory, come. 30 hectares, overlooking Assisi, resting on sun-drenched hills between Torgiano and Montefalco, in the heart of Umbria.

We practice agriculture in full respect of nature, as we strongly believe in the need to find a constant balance between man, soil, plants and animals. As a result, we adopt organic farming respecting the rules of biodynamics.

We firmly believe that this will allow our children to continue farming.


Azienda BioRio
The BIORIO farm is located in the Valle Spoletina, praised for its beauty also by San Francesco d'Assisi, about 8 km from Spoleto. Since around 1700, the Benedetti del Rio family has been cultivating these lands and since 1995 we have returned to the cultivations of our grandfather and great-grandfather, that is what is now the Organic Farming Method. 

Afterward, a brand and a company that distinguishes in a particular way this choice of life and method of cultivation have been created; BIORIO, which continues these choices with the introduction of the Biodynamic method for years, is therefore born.  

Its location on average hill about 350 meters above sea-level is in an optimal condition for exposure, given the absence of fog and persistent humidity; all this therefore fosters the organic and biodynamic farming resulting in an ease of cooking and an excellent taste of our products.

Villa Selva Ristorante Country House

Giorgio Barchiesi and his 3 sons Giuseppe, Michele and Maria, who have decided to make Umbria their home, are well aware of this. Giuseppe, Michele e Maria have inherited the family values, both hospitality which makes Villa Selva country house the perfect place to stay and the care in choosing top-quality ingredients for their restaurant.

Villa Selva then makes available not only a restaurant where you can taste the traditional dishes of the well-known Gambero Rosso Giorgione guesthouse, but also a comfortable hotel, a swimming pool and a beautiful terraced garden between lavenders and roses, olive trees and almond trees, all embraced by magnificent secular oaks.

Azienda agricola Montalcini - Relais Fonte Sala
In 1913 Camillo Montalcini bought Fonte Sala: a farm consisting of 12 hectares of cultivated fields, in the municipality of Montefalco. 
Up until the ’90s the farm remained a small agricultural holding, run by peasants and breeders coming from Fonte Sala.  

The agritourism consists of a swimming pool surrounded by olive trees and 5 independent apartments overlooking the garden, furnished with family antiques and equipped with all comforts.

We have chosen to cultivate in our 6 hectares of vineyards only Sagrantino grapes, a precious native vine variety from Umbria. 
During the harvest, usually in October, for all those who are in Fonte Sala it is hard not to be enchanted by the particular red leaves of this vine. A biological foliage we have been selling with pride since 2016 to the Aboca agricultural farm, an Italian leader in the production and processing of medicinal plants. 

Leccino, Frantoio and Moraiolo: these are the olive varieties making up the 750 plants present at Fonte Sala. 
From these excellent raw ingredients we produce our olive oil which we offer to our guests in all the houses and sell in bottles and in tins (50 cl, 1 lt, 3,5 lt). 


Ristorante La Cantina di Spello
Stone vaults, soft lighting and pure beeswax candles make the room warm and enveloping, enhancing the decidedly informal style of the furnishings. All in a classic context: a double input that creates a fascinating contrast.

The restaurant is renewed in its management and makes use of the presence in the kitchen of two names that are a guarantee: Fausto Benedetti and Mattia Benedetti. The dishes they propose are of regional and traditional inspiration characterized by love for the particular; just think that all the pasta is hand-made. The wine list includes about fifty labels, but you can also taste the Sagrantino and the reds of Montefalco. 

"Only the knowledge of the territory makes the difference" is the motto of Luciano, Paolo, Efisio, members of the restaurant "La Cantina di Spello", so we use local seasonal products. Between red potato gnocchi of Colfiorito with black truffle, chianina fillet certified from the pastures of Valnerina, grilled pigeon, potato flan with black truffle and salad of rapunzoli you can buy pure beeswax candles, marble sculptures, dishes of Umbrian handicraft ceramics, jams and grappas of the house.

Cantina Antonelli San Marco
Antonelli San Marco is a wine company of 170 hectares in a single body of the Docg Montefalco area with a great history behind it, a great passion for this territory and a great care for the quality of the products. 

For years he has been undertaking a process of research and continuous improvement from the vine to the bottle according to a style aimed at the typicality and balance, drinkability and elegance, more than the power, with delicate extractions and a moderate use of wood.


Azienda Il Tarabuso
In the heart of the Colfiorito Natural Oasis on the hill above the Swamp, in the Forcatura locality the "Il Tarabuso" Agricultural Company is located. Eco-sustainability and environmental respect are the founding values of the Company's economy. The tarabuso (Bittern), symbol of biodiversity and sustainability of the territory of Colfiorito, is an animal at risk of extinction, highly protected and belonging to the family of ardeidae, present in the swamp of Colfiorito with a percentage among the largest in Europe.

About 30 species of Spontaneous Herbs have been growing and reproducing spontaneously in their land for over thirty years without the use of fertilizers and herbicides, wild fruits such as myrobalan (Prunus cerasifera), cornelian (Cornus mas) , blackberry (Rubus ulmifolius), wild apple tree (Malus sylvestris), blackthorn (Prunus spinosa), Rosa canina (Rosa canina) and products of the undergrowth like mushrooms and truffles. Famous is the phrase of the philosopher Ludwig Feuerbach, "Man is what he eats" and our slogan is "we eat what we find".

It goes beyond heroic agriculture, for two years the company "Il Tarabuso", now home of the "Italian Academy of Spontaneous Plants", with the collaboration of the Department of Chemistry, Biology, Biotechnology of the University of Perugia, organizes foraging courses, in search of spontaneous herbs, wild fruits, mushrooms, truffles; the collected products will then be presented, cooked and tasted in the company. Many of these products are also supplied to the "La Cantina di Spello" restaurant, a partner of the company "Il Tarabuso" for about ten years. Luciano Loschi is the owner of the company "Il Tarabuso", president and founder of the Accademia Italiana Delle Erbe Spontanee (Italian Spontaneous Plants Academy), founding member and president of the Ristorante la Cantina di Spello.

Giorgio Barchiesi is big and cheerful, with an open and sensitive character and a true companion of adventures. In his vegetable garden he grows everything, breeds animals of all kinds and prepares cuisine as it should be.

He is known as Giorgione, the protagonist of a TV series on the Gambero Rosso Channel called, "Giorgione - Orto e Cucina". Class '57, an atypical Roman (he left the capital at 19 and has not returned), Umbrian by adoption, Giorgio cooks simple recipes with passion in his inn, creating tasty combinations easy to whip up.

Azienda All'Ombra Della Pia
Located on a beautiful hill in the town of Bevagna (PG), next to the fourteenth century shrine of the "Madonna della Pia" (former Roman temple), in the farm "All'Ombra della Pia" you can benefit greatly both from our products and from the lucky position with breathtaking views on the main historical-naturalistic beauties of the Valle Umbra Sud. 

Thanks to the experience of the generations that have preceded us in the family, we produce the best the land can offer us: we breed snails and farm animals, cultivate hemp, produce vegetables ... all with the utmost respect for the biological and agronomic balance of our territory , using only traditional and natural cultivation techniques. 

A visit "All'ombra della Pia" is not just immersing in nature, it is a real rediscovery of our agricultural tradition.


Azienda agraria Bioalberti
The Bio Alberti Farm is located in the gentle hills of Umbria near the small village of Poggio Aquilone and its 560 hectares stretch across the provinces of Perugia and Terni.

The farm has been operating for the past 60 years, but it is only in the recent years – motivated by passion and love for the soil – that Guido and Paola have brought about significant changes by investing in two aspects of the business: the values and the traditions of the agricultural world.

They have thus resurrected and rediscovered the flavours produced by traditional farming, a courageous choice at a time when the dominating force in gastronomic progress is fast food. 

The terrains within the organic farm are cultivated as in ancient times, in rotation and fertilizers coming from the breeding of Chianina cattle. The company is also certified by the Mediterranean Certification Institute LLC .


Fattoria Calcabrina
The family-run company was founded in the early 2000s, from an idea of the parents Angelo and Liliana and the eldest son Diego, who had sensed the potential of the territory of Montefalco.

The company is has initially dedicated to the production of wine, made in the house garage converted in a cellar, and a very small production of extra virgin olive oil. In 2007, with the purchase of an old house in the countryside, goat breeding and the production of raw milk goat's cheese began, all strictly biodynamic.

In the last 10 years the company has had a slow and steady growth and 3 workers maintaining a medium / small production and excellent quality levels.

Being a real farm, strong is the request for guided tours and tastings on- the -spot. In 2018 the Formaggeria Calcabrina was also inaugurated. Located in the historic center of Foligno, it is mainly led by the younger son Mirco. It is the company sales point dedicated to the culture of cheese in which you can find not only the family products but also rare excellence dairy and gastronomic products of Italy.

Molino dei Trinci
The idea of ​​a production that wants to be innovative but strongly linked to tradition, was from the beginning that of providing customers with a product that was as responsive as possible to the canons of a healthy, genuine and easily traceable origin. and identifiable with the company itself from which the raw materials come, the "Short Chain".

Andrea and Emiliano Marini as owners of the Torre di Acqua S. Stefano Agricultural Company, since the very beginning of 1993 have undertaken a cereal production of certified organic cereals and legumes, in the firm determination to produce in providentially uncontaminated mountain terrain , healthy foods to re-introduce the right and healthy intake of high-quality fiber and nutrients into daily nutrition. The direct experience in "field" has shown that transforming the cereals produced in the company, exclusively and exclusively with certified organic methods, would have given the safety of excellent products from every point of view, from organoleptic qualities to flavor, to aromas.

The strong link with the territory from which the name Molino dei Trinci (in honor of the Lords of Foligno, the Trinci family, 13th-14th centuries) and with the agricultural sector from which the work of the mill and the furnace is made clear to users what are the processes of supply chain that are at the base of a healthy and genuine production aimed at high quality without deception and compromise. And it is precisely from the relationship of trust that is established with the public when approaching this production that new stimuli of development are found at the service of the community in a mutual exchange of ideas always open to innovation.





La Semente
Thanks to its many souls (day center for disadvantaged people, social farm, and rural district) it is a multi-functional center in which socio-health aspects, social enterprise and systemic approach to the territory are developed. Inside it various types of society coexist, aimed at different missions. 

From the rehabilitation of people with disabilities, we move on to cooperative business mechanisms, coming to the collective management of large-scale social problems that, by their nature, exceed the borders of La Semente itself.

The Farm (managed by an agricultural-social cooperative), where a mixed group of workers is employed, among which there are also people with disabilities, is economically and financially sustainable and collaborates with public institutions, profit organizations, with the variegated world of third sector and the local community. In the 4 hectares of land are cultivated vegetables, fruit, organic vegetables, honey and eggs, thanks to the breeding of laying hens of 50 heads raised on the ground and outdoors in full respect of the animal and nature.

From the vegetables, also the line of processed products "Gli invasati" is born: under oils, sott'aceti, jams, preserves, sauces. Recently, La Semente has given life to a farm and started the catering service. Last but not least, following the slogan "Coltivatori d'Intenti", the consulting service, based on the frontier techniques of the business / service design, in favor of external realities, both profit and nonprofit, in need of support in the start phase -up.




Azienda agraria Alle Due Torri
At the "Two Towers" we have been practicing organic agriculture since 1992 and have progressed over the years, meeting and experimenting on our land, the effectiveness of biodynamic agriculture preparations and actual microorganisms (E.M.). 

These agricultural techniques are able to bring the fertility and microbial vitality of cultivated fields to optimal levels, promoting healthy plant development and the production of healthy foods. The international "Demeter" certification of our land and agricultural production guarantees the quality of our work for those who do not know us and the healthy quality of the foods they buy.

In addition to the plants cultivated with the biodynamic method, you can learn about the stable of cattle of the prized Chianina breed, the splendid animal with a white coat, bred in Umbria since Roman times.

For those who want to live an experience of pure relaxation, in a strategic position to reach the main towns of Umbria in less than half an hour by car, we propose you our "agriturismo" Le Due Torri - Casale di Ponte Pazienza ", in the heart of the farm, on the outskirts of Spello and twelve kilometers from Assisi. Equipped with six apartments with a large garden, swimming pool and board games, the agriturismo is the ideal place to spend a holiday immersed in greenery, under the banner of well-being and friendliness.




Istituto Agrario IIS CIUFFELLI - EINAUDI
From 1863 in Todi there is a school of agriculture characterized since its foundation by one of its agricultural companies, as a privileged place of practice and experimentation but also of real production.

The company, which covers 75 hectares, all in the territory of Todi, is distinguished by a developed multi-functionality, with multiple agro-food activities and as many quality products.To enhance and promote the local specialties more and more, there is also the "Bottega Montecristo", a company store that makes its mission a short chain and zero kilometer.

The company is also an ante litteram Educational Farm. It is characterized by a catalog of thirty scientific, environmental and food education laboratories, aimed at schools of all types and levels but also organized groups of adult citizens.

Strengthened by the many activities carried out at school and in the company, the teaching experiences "in the field" concern all active supply chains, with a personalized approach based on the age of the children involved and the needs expressed in the booking phase.
Production, experimentation and direct sales, but also education and training in the food sector: these are the distinctive elements of an almost unique initiative in Italy, with a school and agricultural company united in a large Campus named "Cittadella Agraria", whose main seat is in the former medieval Monastery of Montecristo, a site of great historical and cultural interest.

Azienda Agricola Montemelino
Montemelino is a small organic farm of just over 60 hectares, located on the northern hills of Lake Trasimeno, between Umbria and Tuscany, at around 300 meters above sea level, which has – with a view of the lake – the highly favorable micro-climate offered by the lake basin. The farm is located on the northern hills of Lake Trasimeno on the border between Umbria and Tuscany, Tuoro. A few kilometers from Cortona, in the province of Perugia, is an ideal location to rest but also to visit cities and villages.

The recovery of old houses has taken account of the characteristic features of the place and at the same time the needs of comfort: simple country homes, environmentally friendly. The pool fits discreetly between the olive trees and is available to guests.

The farm Montemelino is specialized in the production of wine and extra virgin olive oil.
Thanks to the favorable location of the vineyards and olive groves, the mild climate of Lake Trasimeno and the passion of the owner, the company produces high quality products.

Azienda Agricola Liberovo
The Liberovo organic egg production company by Pier Francesco Pennazzi is located in the countryside between Amelia and Montecastrilli, in the province of Terni.

The history of the family business dates back to 1901, when Pier Francesco's great-grandparents decided to move from Emilia to start their business in Umbria. The company is totally organic, part of the cereals and all of the fodder are produced inside, also under a strict organic regime, used for the production of birdseed intended for the feeding of laying hens. The hens, within the company, are free to graze from sunrise to sunset, to lay, drink and eat organic grains (mixture of wheat, corn, calcium carbonate and proteins) in complete freedom according to the needs of each of them, and they have at their disposal a totally uncontaminated walnut grove where they can scratch around in the absolute absence of polluting foreign elements.

Laying hens do not take any food containing chemical compounds and are not subjected to any preventive antibiotic treatment; only in case of real need the hens are subjected to phytotherapy and / or homeopathic treatments.
The company's energy needs are provided by solar panels installed on the structures intended for the shelter of the hens, avoiding the impact with the landscape, and the company always selects, packs and distributes the eggs with the guarantee of a very short, strictly controlled and 100% organic production chain that ensures the final consumer a fresh product (so much so that it is distributed directly by his own means), with excellent organoleptic qualities and without any presence of chemical additives.

The concept of organic is now beyond the passing health fashion, and is finally establishing itself as a real lifestyle, as much as possible in harmony with our planet, in search of a desirable balance between all living beings, which do not see no species prevail over the other on the basis of an alleged superiority: balance that must be able to guarantee a happy coexistence for all forms of life.
These are the bases on which Pier Francesco Pennazzi's Liberovo is based and looks to the future where, for more than 30 years, the absence of chemical treatments has been allowing nature to run its course, now totally regenerating itself.
For years, Liberovo has embraced this corporate philosophy, living in symbiosis with nature and generating with it a continuous relationship in the constant search for its understanding. Liberovo's commitment does not end with the company's activities, but sees it also strongly committed to the development and promotion of its territory and the dissemination of a correct and biocompatible lifestyle.




GUS Bottega Alimentare
GUS food shop was born in Foligno in March 2016.

The menu concept, designed according to the GUS food shop brand, is made up of two different proposals. "La Bottega" and "la Cucina", both adaptable according to one's preference. This concept leaves the customer the opportunity to establish a playful experience with food through a "game" of tastings that makes it a characterizing element today.
The GUS food shop catering provides a continuous opening, from Monday to Sunday, with the exception of the latter for lunch; also including the aperitif of the day, evening and after dinner.

In the Bottega Alimentare proposal we can find raw materials such as meats, sausages, cooked, fresh, aged, blue cheeses, preserved in oil and vinegar, smoked, marinated and salted fish, which can be tasted at the moment or purchased at retail.

The table service conditions are two: the half portion (tapas) or the whole portion, both served in a very short time with an important optimization of management costs given its practically absent preparation.

The products are a selection from all over Italy, with particular attention to Umbrian products, selected according to a choice criterion that takes into account the manufacturing processes, respect for the environment and the organic, foundations of the "GUS philosophy" .

The kitchen has a list of about 18 courses which vary monthly and follow the seasonality of the raw materials. Do not miss a look at tradition, thanks to the choice of the best Italian companies and the raw materials of the garden owned by GUS.

All foods are processed following vacuum cooking techniques, in water, at low temperature.
GUS is characterized by the constant search for food quality, which must comply with ethical and professional parameters related to work and the environment, therefore the cooking and conservation techniques applied by GUS are committed to minimizing redundancies producing waste equal to zero.

It can therefore be argued that "Total Quality Management" is the cardinal principle of GUS s.a.s.


Cantina Cenci
Cantina Cenci is located in the historic rural settlement of Olivetan monks, who were experts in selecting lands adapt for grape and olive cultivation. The winery vineyards are positioned on these lands where the Cenci family has been producing wines for four generations by applying the principles of tradition and innovation.

The vines are grown on soil composed of clay, lime, calcium, and high levels of travertine – a rich backdrop for winemaking. The vineyard setting grants year-round greenery with natural, organic fertilizers. Grapevine row maintenance and the elimination of non fruit-bearing buds are carefully monitored through mechanized processes. 

The processes of grape bunch pruning, destemming, and crushing improve the microclimate and overall quality of the grapes in order to minimize the use of sulfur and copper. Pure, organic agriculture.



Cantina LumiLuna
An abandoned vineyard for Lumiluna is a vineyard to be recovered; this is why we call ourselves "vineyard restorers", because in the midst of the many abandoned rows of our territory we have found vines, stories, genetic heritage and human signs.

The winery is located in Mercatello, just south of Perugia; since 2015 we have been hunting abandoned vineyards to bring them back to life, rediscovering and enhancing vines that are almost forgotten and at risk of disappearing; the roots of a 50-year-old vine give the grapes a unique, particular and important history.

For the “younger” vineyards we have instead chosen vines that represent the winemaking tradition of our territory: Grechetto, Trebbiano and Sangiovese; angular, hard and strong vines that reflect the character of us Umbrians, but which if worked with patience and passion can turn into elegant, generous wines with a unique style.

The first Lumiluna harvest is in 2018 and from the processing of these grapes, Diciannove, Casale dei Ceci and Rio dello Spineto, our three bottled wines, are born; we are Giulio (Rinaldi) and Luca (Bigicchia); we restore vineyards and make wine.
